roasted chicken

Roasting a chicken seems like the perfect Sunday cold-weather dinner. It's delicious, easy, and provides for leftovers for a few nights - the ideal combo! My most recently roasted chicken didn't disappoint both in its original state or as any of its several incarnations - we enjoyed chicken soup made from the leftovers today.
